Ajo cabañil is a very simple but tasty sauce, made with crushed garlic and vinegar, sometimes with a little cumin added.

Ajo Cabañil is very popular in the Murcia region and and is usually prepared by crushing garlic and mixing it with vinegar, water and salt, and adding meat, such as goat, lamb or rabbit. Some also cut potatoes into slices and add into the sauce.
